Healthy Summer Eating!

by Sunshima Team

Summer has been a bit hit and miss this year especially for those of us in the UK. I’m even writing this wearing a jumper, but this does not mean that we can’t bring some summer feeling to our food. So even if it’s a little grey outside, our plates can be a riot of colour and deliciousness. Join us as we dive into the world of healthy summer eating and explore some scrumptious recipes that will have you saying, “Yes please!”

Fresh Summer Bounty

As the temperatures rise, our bodies crave foods that hydrate and refresh. Lucky for us, summer gifts us an array of fruits and vegetables that do just that! Think juicy watermelons, succulent berries, crisp cucumbers, and vibrant sweet peppers. These colourful wonders are packed with vitamins, minerals, and antioxidants that support our well-being while keeping us cool.

Sunshine Smoothie Bowl

Start your morning with a burst of sunshine in a bowl. Blend up a medley of frozen mango, pineapple, and banana with a splash of coconut water. Pour it into a bowl and top with sliced kiwi, berries, chia seeds, and a sprinkle of granola. It’s like a tropical vacation for your taste buds!

Crisp and Crunchy Veggie Wraps

Lunchtime calls for something fresh, crisp, and easy to assemble. Grab your favourite whole-grain wrap and load it up with crunchy lettuce, colourful peppers, shredded carrots, and slices of avocado. Drizzle with a zesty vinaigrette made from lemon juice, olive oil, and a pinch of salt. Roll it up, and you’ve got a meal that’s as satisfying as it is nutritious.

Infused Water Goodness

We all know hydration is key and as we mentioned in our last blog, it doesn’t have to be boring.  Elevate your water game by infusing it with slices of citrus fruits, cucumber, mint leaves, and even a few berries. Not only does it taste refreshing, but it also encourages you to drink more water throughout the day.

Cooling Cucumber and Mint Infusion

Fill a jug with water and add slices of cucumber and a handful of fresh mint leaves. Let it sit in the fridge for a few hours to allow the flavours to combine and you have a crisp and invigorating drink that will keep you hydrated.

Outdoor Flavour Fiesta

Summer and barbeques go hand in hand. So, fire up the barbecue and let the smoky flavours infuse your favourite proteins and veggies. This style of cooking not only adds a delightful char but also helps retain nutrients and reduces the need for excessive oil.

Barbequed Veggie Skewers

Thread chunks of crunchy sweet peppers, courgettes, cherry tomatoes, and red onion onto skewers. Brush them with a light marinade made from olive oil, garlic, lemon juice, and a sprinkle of herbs.

Barbeque until they’re slightly charred and tender. Serve with a side of quinoa for a balanced and delicious meal.

No Guilt Treats

What’s summer without a touch of sweetness? Just swap heavy desserts for lighter options that still satisfy your sweet tooth.

Frozen Yogurt Berry Ice Lollies

Blend together Greek yogurt, your favourite berries, a drizzle of honey, and a splash of vanilla extract. Pour the mixture into ice lolly moulds and freeze until solid. Then enjoy without any guilt.

So, whatever the weather is like where you are this summer, embrace the vibrancy of the season, knowing that you’re nourishing your body with goodness. Here’s to summer food that makes us feel alive, and to the joy of savouring every moment!
